Secret Chef brings the restaurant home. We design and execute a five-course seasonal tasting menu in the room you already love most — your own.
A single chef. A small service. Linen, candles, and a quiet choreography around the table. We arrive in the afternoon, cook through the evening, and leave the kitchen the way we found it.
Reservations are accepted for parties of twelve or more, on the evening of your choosing.

Amuse-Bouche
Smoked salmon mousse, dill oil, rye crisp
A single bite to begin. Cured in-house, finished at the table.

Seared scallop, cauliflower velouté, brown butter, capers
Hand-dived. Three on the plate, perfectly caramelised.

Sorbet
Cucumber & elderflower, a whisper of gin
A pause between sea and land. Cleansing, cold, herbal.

Main
Slow-braised short rib, smoked bone marrow mash, charred shallot, red wine jus
Eight hours in the oven. Falls from the bone. Served with seasonal greens.

Dessert
Dark chocolate delice, salted caramel, hazelnut praline
Bittersweet, glossy, finished with a pinch of Maldon. Coffee to follow.
